Cover the potatoes with salted water in a large pot. Bring to a boil; Reduce the heat. Boil for 15 to 20 minutes until potatoes are tender when pierced with a sharp knife. Then in a large bowl, whisk together the sour cream and mayonnaise; now add the warm potatoes, and fold gently to mix well, season with salt and pepper. Cover and refrigerate for at least 2 hours and up to 1 day. To serve, season with salt and pepper, if needed; Fold into the salad, and garnish with bacon and more scallions if desired. While the bacon is cooking, cook the cubed potatoes in a pot with enough water to cover the potatoes. Boil just until fork tender (about 13 minutes).

While the bacon and potatoes are cooking, stir together the Greek yogurt, light mayonnaise, onion, and steak seasoning in a large bowl. When the potatoes are cooked, drain the water and let them come to room temperature. Add the usually warm potatoes to the Greek yogurt mixture and toss in the bacon and cheese. Mix it all together well – cover and refrigerate for 2 hours so the flavors blend well.

1 3 pounds white new potatoes, cut into quarter and ¾-inch pieces.
2 Coarse salt and pepper to taste.
3 ¾ cup low-fat sour cream.
4 ¼ cup light mayonnaise.
5 Plus ½ cup finely chopped scallions for garnish.
6 4 slices of bacon, cooked and crumbled, for garnish.
7 1 teaspoon kosher salt.
8 ½ cup grated blue cheese.
9 ¼ cup chopped red onion.
10 3 tablespoons chopped Italian flat-leaf parsley.
11 5 slices bacon, cooked until crisp and crumbly.
