Preheat the oven to 425 degrees F. In a medium pot with a tight-fitting lid, combine the wild rice, 1 cup water, and a pinch of salt. Bring to a boil over high heat, and cook for 45 minutes. Remove fluff with a fork and cover. Allow to steam for 5 more minutes. Divide between two serving bowls. Then place the sweet potatoes on a rimmed baking sheet drizzle with olive oil and season well with salt and pepper. Continue roasting until the slices are golden brown on the underside, about 18 minutes. Flip the pieces upside down and fry for another 5-8 minutes, until the edges are golden and slightly crispy. Add to dish with rice. In a large serving bowl, mix the kale, beets, fennel, and chicken. Divide the bowl between the bowls and garnish with goat cheese and almonds. Serve with extra dressing on the side.
