Add all the ingredients except the cornstarch, and close the lid. Seal the steam valve and set it on high pressure for 40 minutes and release the steam naturally for 20 minutes. Now lift the lid and remove the meat and onions in a large bowl. Set the pot for roasting.

In a small bowl, add 1 cup of your hot broth from the pot. Then add the cornstarch and stir well until you have a smooth roux. When the liquid begins to bubble, add your corn. Pour the starch mixture into it. Stir constantly for about 4 minutes so that the sauce thickens completely. Shred the meat in the bowl with a fork.
