Funeral Cake Recipe Composition
Preheat the oven to 400 degrees F. Mix all the ingredients well, and layer the chocolate chips last so they don’t sink under all the batter. Prep a pan with cooking spray (I prefer Pam) and a dusting of flour. After baking without flour I find it difficult to remove the cake from the pan. Bake for 40 minutes, or until a toothpick comes out easily and no batter comes out, keeping a close eye on the chocolate chips! Batter chips give it a lighter color. It is very important to cool the cake on a cooling rack. For 25 minutes or after turning around the edges with a knife, invert the pan using a cooling rack and the cake will slide out completely.
A dusting of powdered sugar is the perfect touch, just warm it up and serve it with ice cream. Add the buttermilk (or buttermilk substitute), beaten eggs, baking soda, and vanilla to the flour.
