Artichoke Parm Sandwich Recipe

Preheat the oven to 400 F. Line a large baking sheet with a wire rack. Spread some of the spinach and artichoke in an even layer on the rack and season with salt and pepper. Place the baking sheet in the oven for just 25 minutes, or until the vegetables are heated through and tender and some of the water has dried out. In a medium-sized bowl, combine the softened butter, garlic, chives, and basil leaves. Using a slotted spoon, mash all the ingredients and stir the ingredients together until well combined. Spread the cooked butter evenly over the split rolls, then transfer the rolls to a large baking sheet, split-side down on top of the couscous.

Bake the rolls for 15 minutes or until lightly golden. Remove from the oven, set the top rolls to one side, and increase the oven temperature to 400 F.Divide the spinach and artichoke hearts into a roll and spoon over the pizza sauce, then top with the shredded mozzarella and grated parmesan. Return the roll bottoms to the oven for 6-7 minutes, or until the cheese is melted and lightly golden. Remove the baking sheet from the oven and pre-wrap the sandwich with roll tops for quick serving. Spread the rest of the cheese mixture evenly over the top of the bake. Then spread the creamed spinach mixture well on the bottom piece, and place the marinated artichokes evenly on top. Squeeze a lemon wedge over the artichoke, close the sandwich, and cut it in half. Serve hot with extra lemon wedges.

1 17 ounces frozen whole-leaf spinach.2 1 ½ cups marinated artichoke hearts, drained.3 Salt as needed.4 1/3 teaspoon black pepper.5 1 stick (½ cup) butter, softened.6 Garlic as needed.7 2 tablespoons chopped chives.8 Chopped basil as needed.9 1 long-seeded Italian roll (quartered) or 4-seeded hoagie roll.10 2 cups pizza sauce.11 2 cups shredded low-moisture mozzarella.13 ½ cup grated Parmesan cheese.
