Albers Cornbread Composition

Preheat the oven to 400 degrees Fahrenheit. Grease a large 8-inch baking pan. In a medium bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Combine the milk, oil, and egg in a small bowl. Mix well and add the milk mixture to the flour mixture; Stir just until the mixture is dissolved. Then pour it into the prepared pan. Bake for 20 to 25 minutes or until a wooden toothpick inserted in the center comes out clean. Serve hot and enjoy.

Drop batter into 12 to 13 greased or paper-lined pans. Fill muffin cups to 2/3 inch. Bake for 15 minutes. Mix all dry ingredients (including sugar) in a large bowl. In a separate bowl, combine all the liquids. Then add the liquids to the dry ingredients and keep mixing until well blended. Do not over-mix. Pour into a greased 8″ or 9″ square pan. Continue baking for 25-30 minutes until the top is golden and a toothpick inserted comes out clean.

1 1-½ cups flour.2 ½ cup cornmeal.3 Baking powder as needed.4 Salt as needed.5 ⅔ cup sugar.6 1-¼ cups milk.7 2 eggs.8 3 tablespoons of oil.9 ½ cup butter, melted.
