El Boricua is chicken skewers seasoned with Puerto Rican spices and then grilled to perfection. You can keep them all summer long. Enchocho is a traditional Latin dish. This Puerto Rican beef blend is packed full of beef, corn, plantains, sweet potatoes, and more. One of the many popular Puerto Rican dishes, this is a serious stew meant to feed a crowd.
El Boricua Composition
Heat your caldero or Dutch oven over low heat, and add your olive oil and sofrito. Stir constantly until fragrant and tender, but not browned. After about 4 minutes, add the season, tomato sauce or paste, and the chicken balls. Stir until combined. Add dried pigeon peas, national spice or oregano, bay leaves, and water/to make broth. Add cayenne pepper/or olive oil if using. Continue to boil the liquid until it thickens, and then taste for salt. If it needs more saltiness, add another chicken bouillon cube.
You can cook more of this liquid if you like, as it will determine the final seasoning of the rice. After the mixture boils, add the rice to it. Drizzle the rice with the kvass and distribute the pigeon peas evenly throughout. Once the excess liquid is completely absorbed, stir the rice and cover again to steam. Lower the heat, and then let it steam for 20-25 minutes. This is done until all the liquid is absorbed and the grain is fluffy and fully cooked.

1 1/4 cup ham.2 2 bay leaves, whole.3 15 oz cans of pink beans.4 3 potatoes, small.5 1 chicken bouillon cube.6 3 tablespoons of sofrito.7 8 Spanish green olives.8 1 6-ounce cans of tomato sauce.9 Salt and pepper to taste.10 Oil and vinegar as needed 11 1 tablespoon olive oil.
