El Boricua Composition

Heat your caldero or Dutch oven over low heat, and add olive oil and sofrito. Stir constantly until fragrant and tender, but not browned. After about 4 minutes, add the season, tomato sauce or paste, and the chicken balls. Stir until combined. Add dried pigeon peas, national spice or oregano, bay leaves, and water/to make broth. Add cayenne pepper/or olive oil if using. Continue to boil the liquid until it thickens, and then taste for salt. If it needs more saltiness, add another chicken bouillon cube.

You can cook more of this liquid if you like, as it will determine the final seasoning of the rice. After the mixture boils, add the rice to it. Drizzle the rice with the kvass and distribute the pigeon peas evenly throughout. Once the excess liquid is completely absorbed, stir the rice and cover again to steam. Lower the heat and let it steam for 20-25 minutes. This is done until all the liquid is absorbed and the grain is fluffy and fully cooked.
