In a large skillet over medium heat, add the olive oil and lean beef and cook for 6-7 minutes or until the beef is no longer pink. Let it turn brown. When the meat is brown, break it into small pieces. Drain the excess fat from the pot before adding the rest of the ingredients. Mix the onion and mushroom soup mix packet with 3 cups of water and stir to hydrate the onions and spices.

Add the cooked dry meat to the pot, then add the low-sodium vegetable broth, whole grain corn, chopped green beans, peas and carrots, diced tomatoes, salt, and pepper. Then mix in the uncooked macaroni noodles in the boiling soup pot, stir, and cook the noodles for 14-15 minutes. Stir the soup every few minutes making sure the noodles don’t stick to each other.
