Add 1.5-2 glasses of water in a 3 or 5-liter capacity aluminum/steel pressure cooker and heat the water on a medium flame for 4-5 minutes before placing a plate filled with the mixture. Place a small bowl or stand in the pressure cooker, and cover the top with a plate. You can also use a dhokla stand. Remove the pressure cooker and close the lid. Continue to cook on medium heat for 15 minutes. After 15 minutes open the lid and poke a knife in the dhokla to check whether the dhokla is cooked from inside or not. If not, cook for another 5 minutes. If you don’t want to make a large quantity of dhokla, don’t forget to add water to the pressure cooker after checking every time. Add lemon juice, salt, green chili paste, and ginger paste to the gram mixture and mix well.

Now add Eno salt to this mixture and stir the mixture well with a spoon, as soon as air bubbles start to appear in the mixture, immediately transfer the mixture to a plate and place the plate on a stand inside the pot. The water in the bowl should be hot and steamy. Cover the pot and let the dhokla cook on medium heat for about 20 minutes. Gram flour dhokla is ready, switch off the gas, remove the dhokla plate from the pot, and let it cool. Run a knife along the edge and separate the dhokla from the edges. Invert the dhokla plate on another plate and take out the dhokla. Cut the dhokla into desired shape with a knife.
